Shrimp and Grits recipe

Here's my recipe. :-)

Ingredients:

Grits:

1 c. stone ground grits
4 c. milk
¾ tsp. pepper
1 tsp. Salt

Shrimp:

½ lb. smoked sausage
2 c. chopped onions
1 c. chopped celery
1/2 c. chopped green pepper
2 tsp. Chopped garlic
1 lb. peeled shrimp
¼ c. dry sherry

2 c. shrimp stock
½ c. hot water
pinch of cayenne
½ tsp. Parsley

Directions:

First, the Grits:

Boil milk with seasoning. Add grits. Add milk or water as the milk is absorbed until the grits are creamy and soft.

Then, the Shrimp:

½ lb. smoked sausage          Render slowly until done
2 c. chopped onions             Sauté in sausage grease until translucent
1 c. chopped celery
1/2 c. chopped green pepper
2 tsp. Chopped garlic          Sauté about 1 minute
2 Bay leaves
1 lb. peeled shrimp                Sauté about 1 minute
¼ c. dry sherry                      Be careful with the sherry. It will flame up!
2 c. shrimp stock                  Add. Simmer off 2 - 3 minutes
½ c. hot water

pinch of cayenne                 Add at the end
½ tsp. Parsley

Adjust seasoning to taste.

Serve Shrimp over the Grits.
